Recipe: How to Make Classic Pasta Carbonara

Over on our Recipes Page, we just added a page for probably my favorite category of food, Pasta and Rice. And what better first recipe to post on this new page than my favorite pasta dish of all-time, classic Roman pasta carbonara!

It’s very possible you’ve never tasted a good carbonara, because so many restaurants in the U.S. have no idea how to make it. Most restaurants add cream to their carbonara, and it fills me with an unspeakable rage every time I see that on a menu. True carbonara contains cheese (Parmesan and/or Pecorino Romano), egg yolks, pork (guanciale/pancetta), and black pepper. That. Is. It!
